Garlic Chicken Pizza

I made this last night (much to Spencer's skepticism) and it was a surprising hit. We practically fought over who got to eat the leftovers today! It's a basic chicken alfredo pizza recipe with some added flavors and toppings.
1 pizza crust
1 1/2 cups of your favorite alfredo sauce (I used a canned roasted garlic alfredo because I didn't have all of the ingredients to make my own)
1/2 envelope of Italian dressing mix
2 cups shredded chicken
3 T minced garlic, divided
Italian seasoning
1 1/2 cups mozzarella cheese
1/4 cup parmesan cheese
2 roma tomatoes, chopped
3 green onions, chopped
1. Heat oven to 425 F
2. Make your favorite pizza crust. (I have one we always use if you don't have one) Roll out onto pizza pan or stone to desired thickness
3. Saute chicken in a pan with 1 T minced garlic. Season with Italian seasonings to taste
4. Mix 2 T minced garlic and Italian dressing mix with alfredo sauce. Spread onto pizza dough.
5. Add chicken on top of sauce. Then top with mozzarella and parmesan cheese.
6. Bake for 15-18 minutes. Then top with chopped tomatoes and green onions. Bake for 5 more minutes

Joining In...
I figure if I am going to get the awesome opportunity to use ALL of your scrumptious meal ideas, then I better do my part and share a few of my favorites. So, here ya go.
Italian Stuffed Calzone
2 packages (11 oz each) refrigerated French bread dough, divided. (I buy scone dough or Macy's F.B. dough at the bakery.)
1 cup (4 oz.) shredded mozzarella cheese
1/2 cup diced green bell pepper
1/2 cup pitted ripe olives, sliced
1/4 cup chopped onion
1 can (8 oz) pizza sauce
1 teaspoon italian seasoning mix
2 garlic cloves, pressed
1/2 pound italian sausage, cooked, crumbled, drained
1 Tbsp. Olive oil
1/4 cup (1 oz) grated fresh parmesan cheese (optional)
Preheat oven to 400 degrees. Unfoll one package of the bread dough out; rool and stretch to edge of baking stone. Sprinkle mozzarella cheese over dough to within 1 inch of edge. In bowl, combine bell pepper, olives, onion, pizza sauce, seasoning mix and garlic; mix well. Add cooked sausage; mix well. Spoon meat mixture over cheese; spread evenly. Unroll remaining dough directly over filling by matching top edges of dough and shaping to fit as dough is unrolled. Trim excess dough from corners, forming an even edge. Roll and crimp edges to seal. Drizzle oil over dough; spread evenly. If desired, sprinkle Parmesan cheese over dough. Make three crisscross cuts, about 6 inches long, across center of dough to vent. Bake 18-20 minutes or until deep golden brown. Cut into wedges. Serves 8 people.

anything-goes pizza
This is a great last-minute meal that uses whatever you have on hand.
Start by rolling out your homemade or store-bought pizza dough (I make mine in the food processor and will be happy to share the recipe if you're interested). Brush the dough with a little bit of olive oil (I drizzle a little on the dough and spread it with a paper towl). Top with any combination of the following : left-over cooked, diced chicken, small pieces of ham, chopped cooked spinach, sliced tomatoes, shelled edamame, minced herbs, chopped onion, minced garlic....or anything you have on hand that your family likes. top with shreded cheese of your liking and bake at 425 for 10-15 minutes.
We tried it the other night with chicken, some cooked, chopped spinach from the garden and mozzarella it was so yummy. I have done it with other combinations of the above ingredients too and we haven't had one we didn't like.
